Market Update From the West Coast Meatheads
Beef
All prime cuts are steady to higher as the prime grades slides. The choice-select price spread also is increasing due to select grading increasing. Strips and Shortloins have been on absolute fire these past few weeks. Packers are well sold on these two cuts and prices should remain strong thru June. Sirloin Flap/Flank/Outside Skirt/Tri Tip all continue to remain strong. Chucks/Rounds/Brisket are where the current values exist. Surprisingly the Rib has been able to maintain the current high prices over the past couple weeks. Prices won’t be able to maintain these levels thru summer and we should see some relief soon.
Chicken
WOGs and Thighs are steady into next week and breasts are up a few cents.
Pork
Cost has started the summer increase. Market is strong. All cuts up 10-50 cents.
Lamb
Domestic market steady. Little to no shortages on products. All cuts about the same as last couple weeks. This is expected to stay steady for the near future.
Veal
Market conditions steady. All cuts have remained the same price wise.
Shrimp
All large Mexican wild shrimp is status quo. Little to no product available and prices steady to up depending on how much inventory the supplier has. Smaller Mexican shrimp, especially farmed, has dropped slightly as well as foreign shrimp.
