Market Update From the West Coast Meatheads
Beef
Ribeyes are the big mover into next week and should continue to increase into early December. Carcass weights continue to be running real heavy and light ribs are going for a large premium over heavies. Strips/rounds/chucks/top sirloin are all steady into next week.
Chicken
Breast continue to trend down. Breast should be hitting their winter low over the next few week. Thighs and tenders are steady.
Pork
All pork trending down. Bacon continues to drop a few cents or so weekly. Loins and ribs down as well. Butts are down $.05 – $.10 cents depending on supplier. Looks good for these trends to stabilize and continue.
Lamb
Aussie racks have dropped $.10-$.15 but supplies are limited which doesn’t make sense but maybe supply is on the way? Domestic lamb is up about $.05-$.20 across the board. Large racks will be hard to find through the holidays.
Veal
Veal prices and supply are high and scarce. 6 bone export racks have hit a whopping $18.75/lb. All items including bones are up anywhere from $0.25 to a $1.25.
Shrimp
Next 3 weeks will give us a good indication on Mexican wild in large sizes. U10 and U12 are in short supply so far. U15’s are findable in the $12 dollar range.
